A Refreshing Watermelon Salad from Fiji

It's been a little while since my last postcard from Fiji.

I hope you're doing well wherever you are.

Life here has been as peaceful as ever. Some days are cloudy, and occasionally the trade winds blow a little stronger, but the gentle rhythm of Fiji never really changes.

The other day, I visited the Namaka Fresh Market and came home with more fresh fruits and vegetables than I could comfortably carry.

This time, I also bought a whole watermelon.

Buying an entire watermelon always feels a little ambitious. They're delicious, but sometimes you wonder if you'll actually finish it before it starts disappearing into the fridge for days.

Since moving to Fiji, though, I've started making watermelon salad much more often.

This week's version was simple: juicy watermelon, crisp cucumber, olive oil, fresh lime juice, a pinch of salt, fragrant basil, and a handful of lightly toasted pumpkin seeds.

It was wonderfully refreshing just as it was, although I couldn't help thinking that a little feta cheese or some prosciutto would make it even more delicious.

Living in Fiji has also changed the way I cook.

The ingredients you want aren't always available, and even supermarkets occasionally run out of everyday items. Rather than planning every meal in advance, I usually look at what I was lucky enough to find that day and create something from there.

Surprisingly, that little bit of improvisation has become one of my favorite parts of daily life.
