On a beautiful weekend, there is nothing quite like spending time at home, wrapped in the gentle South Pacific breeze.
For me, this is the ultimate act of self-care—a precious time to let my mind and body simply unwind.

While chicken and beef were the usual staples in my life, our household’s recent obsession has become lamb.
Lamb is rich in high-quality protein and L-carnitine, making it the perfect ingredient when you want to nourish your body and recharge your energy naturally.

However, many people worry that lamb might turn out a bit dry or have too strong of a flavor.
That is why today, I want to share our family’s "magic marinade" recipe.
Packed with the blessings of nature, it makes the meat incredibly tender and juicy right in your oven.


A Gift from Nature: The Power of Our Beloved Fiji Honey

The secret to this flavor is the local Fijian honey that always brings a little joy to my heart whenever I spot it at the market.

Gathered from the wild, tropical blossoms of Fiji, this 100% organic honey is pure, beautifully fruity, and an absolute treasure in our kitchen.

This beautiful honey gently locks in the moisture, keeping the lamb wonderfully succulent.
As it cooks, a soft, comforting sweetness and a caramelized aroma waft through the air, bringing an instant sense of happiness.

To complement this, we add a sun-kissed spice: paprika powder.
With absolutely no heat, paprika brings a gentle sweetness and a grounding depth of flavor that beautifully balances the natural taste of the lamb.

We also add grated onion to let its natural enzymes tenderize the meat even further. With a touch of soy sauce for a deep, savory finish, you get a wholesome marinade that is a true celebration of natural sweetness and umami.


A Nourishing Blend: The Golden Ratio (For 500g of Lamb)

Take a slow breath, grab a spoon from your kitchen, and measure these out at your own relaxed pace:

  • Paprika powder: 1 tablespoon

  • Fiji honey: 1 tablespoon

  • Grated onion: 1/4 of an onion

  • Soy sauce: 2 tablespoons

  • Olive oil: 2 tablespoons

  • Grated garlic: 1 to 2 cloves

  • Black pepper: A pinch


Moving with the Rhythm of Nature: Baking to Perfection

1. Let the Meat Rest in the Marinade

Combine all the ingredients in a zip-top bag, add your lamb, and massage it gently.
Then, let the meat rest in the refrigerator for about 2 to 4 hours.

  • Note: I find that marinating it for just a few hours keeps the meat beautifully fresh and plump, rather than leaving it overnight.

2. Bake with Wholesome, Gentle Heat

Because of the natural sugars in the honey and onion, this marinade is delicate.
Let’s bake it slowly in the oven, allowing the gentle heat to bring out the best flavors.

Preheat your oven to 180–190°C (350–375°F) and bake for 15 to 20 minutes.
After a little while, the sweet, fruity scent of Fiji honey will softly fill your kitchen, bringing an instant sense of happiness.

Depending on the thickness of your meat (like lamb chops versus a larger cut), the cooking time may vary slightly, so take a gentle peek.
If it needs a bit more color, add another 5 to 10 minutes until it develops a gorgeous, glossy glaze.

Watching the meat transform into a beautifully glazed dish through the oven glass is all part of the beautiful, slow cooking ritual.
