Warm Sun-Ripened Tomato and Crisp Tofu Salad with a Spicy Fiji Twist

Today, we’re sharing a quick and delicious Day Two variation using the very same ingredients—cherry tomatoes, tofu, and fresh cilantro—but with a completely different flavor and texture.

This time, the secret is to slowly pan-roast the cherry tomatoes until they become beautifully caramelized and naturally sweet.
It’s the perfect light lunch for sunny days or whenever you’re craving something fresh, nourishing, and satisfying.

The star ingredient is one of my favorite local sauces here in Fiji: Fiji Fire Tropical Bongo Chili Sauce.
Made with fiery yellow Bongo chilies, sun-ripened pineapple, fresh ginger, and 100% natural ingredients, it brings a wonderful balance of tropical sweetness and gentle heat to this simple salad.

 

Ingredients (Serves 1–2)

Base

  • 10 cherry tomatoes
  • Firm tofu (about the same amount as the tomatoes)
  • Fresh cilantro, roughly chopped

Seasoning

  • Olive oil
  • A pinch of salt
  • Freshly ground black pepper

The Magic Touch

  • Fiji Fire Tropical Bongo Chili Sauce (to taste)


Quick & Slow Method

1. Roast the tomatoes

Cut the cherry tomatoes in half. Heat a little olive oil in a frying pan, place the tomatoes cut-side down, sprinkle with a pinch of salt, and cook slowly until they develop a beautiful golden color and their natural sweetness intensifies.

2. Let them cool

This is the most important step.

Transfer the roasted tomatoes to a plate and allow them to cool completely. Mixing them while they’re still hot will warm the tofu and take away its fresh, delicate texture.

3. Bring the flavors together

Place the cooled tomatoes, cubed tofu, and chopped cilantro into a bowl. Drizzle with olive oil, season lightly with salt and black pepper, then finish with as much Fiji Fire Tropical Bongo Chili Sauce as you like.

4. Toss gently

Fold everything together carefully so the tofu stays intact and the sauce coats each ingredient evenly.

Serve immediately and enjoy.
